This year (I think) DH & I are spending Christmas dinner with my parents. I believe it will just be the 4 of us, usually my brother & his girlfriend spend it with her family.
The only way we won't be spending it just the 4 of us is if my BIL invites my parents to spend Christmas with them, because he & my SIL host Christmas dinner, but it's more for her family. My parents used to spend the holidays with some family friends, but they had a falling out, and I refuse to let my parents spend Christmas by themselves since we live so close.
So here's the menu I've come up with:
hors d'oeuvres - stuffed mushrooms #1 or #2
salad - spinach salad
dinner - boeuf en croute , potatoes au gratin, and roasted asparagus (something simple)
dessert - flourless chocolate cake
I was thinking about making a festive cocktail, but I'm really the only one who would drink them. My dad & H are beer drinkers, maybe they'll have wine with dinner - but def. not a cocktail. My mom is a light drinker, she might have 2 drinks the whole night. I'm the one who will be cooking, so I don't want to get all wasted & ruin dinner.
Also, for the boeuf en croute (aka beef wellington) I am probably going to do them individually because my dad likes his meat rare, H like his medium-rare to medium, I like mine medium, and mom likes her medium-well. ::sigh:: I'm going to try to please everyone
lol. I'll b!tch & moan, but I love it. Hopefully it all comes out yummy.

I think your meal sounds fantastic and making the boeuf en croute separate is a great idea.
I have made that cake before and you will love it. Might I suggest homemade whipped cream for the cake and some strawberries and rasberries?

I saw a yummy Cocktail in a magazine- can't remember which one-
Champagne w/ Pomegranate juice to taste, add pomegranate seeds in bottom of flute for garnish. I'm sure you could convince every one to have a small serving as a toast at dinner, and it's just champagne, so It wont cause any meltdowns if mixed w/ a beer or two.
