What is everyone making? All the possibilities are overwhelming me. Anything gratin is out as my mother re-confirmed her dislike for them this evening. I am pretty sure we are going to make a ham. It is just going to be my parents and DH and I, so I won't be making too many sides so I wanna make them count!

Any ideas?

We don't make a Christmas dinner, we do Christmas Eve H'ordeuvres.
Finger foods like: smoked oysters, baby corns, black olives, green olives, a variety of crackers and cheeses and spreads, meats, lots of veggies and fruit.
The past couple years we've been adding cheese fondue to the mix with things to dip like bread chunks, apples, pears, mushrooms, pretzels. We've made an Apple Cider Gouda fondue and a few others.
Christmas day we munch on leftovers from Christmas Eve, and there is usually a lot, we make too much food.
My ILs do a more traditonal Christmas dinner, turkey, ham, mashed potatoes, just like Thanksgiving.

I am not sure as to what I will do this Christmas either. For Thanksgiving I prepared a Ham and my aunt came from El Paso with a turkey. We had a BIG thanksgiving dinner.
As for Christmas I was thinking of doing a traditional Mexican Christmas dinner on Christmas eve
with Tamales and atole and a few other dishes but I am not very sure.
We pretty much have a feast! There are alot of us - myself & my H, my 2 bros, my sis, their SO's, all of our kids, my parents, and sometimes a cousin or two. It usually includes all or some of the following:
Turkey
Roast beef
Veggie patties w/ mushroom sauce (there are some V-tarians in the fam)
Mashed potatoes
Stuffing
2 types of gravy - turkey & beef
Cranberry sauce
Candied yams
Green bean casserole
Cornmeal casserole
Cornmeal muffins
Caesar salad
Green salad
Buns
And then dessert:
Shortbread cookies
Chocolate chip squares
Pies
Chocolates
Plus a variety of beverages including:
Eggnog (some w/ rum!)
Hot chocolate (some w/ Bailey's!)
Cranberry juice (some w/ vodka - Crantinis)
Coffee
Tea
I usually host a HUGE Thanksgiving, but since I didn't get to this year, I'm doing a turkey for Christmas Dinner. For sides I'm doing asparagus w/hollandaise sauce, green bean casserole, garlic mashed potatoes, crescent rolls, stuffing. Appetizers will be deviled eggs, olive/pickle tray, meat/cheese tray, fruit tray, veggie tray. Dessert we will have red velvet cake, strawberry cheesecake, and pecan pie.

I'm a newcomer to this board, but I thought I'd jump in...
At Christmas Eve stop #1 (Aunt/Grandparents): More "traditional" meal - rolls, green beans, rice pilaf, ham, sweet potatoes, relish tray. We always end with peppermint ice cream and chocolate roll cake.
At Christmas Eve stop #2 (Uncles, Aunts, Cousins/Other Grandparents): Homemade pizza with homemade sauce. Lots of variety of toppings (italian sausage, bell pepper, pepperoni, cheese blends, olives). My grandma also makes these things she calls "pizza frites" which is pizza dough rolled in cinammon and sugar
Christmas Day Dinner (Mom's House): Stuffed shells, Ceasar salad, breadsticks, meatballs and sausage, steamed veggies, and the biggest piles of brownies, cookies, chocolates, and other sweets.
My mom always did ham at Christmas. She would do what she called a boiled dinner that her family used to do. The boiled dinner would be ham, cabbage, carrots and potatoes.
You could find a holiday recipe for carrots (the previous poster mentioned cinnamon carrots, sounds awesome) or do a green veg like asparagus. Potatoes could be baked. You could always put sour cream and crumbled bacon out to be put on top to make "loaded" baked potatoes. Or do a garlic mashed potato. Or consider sweet potatoes or yams.
My husband and I will probably do beef. It's just the two of us, but we typically cut a rib roast in half. We freeze one half and cook the other. With that will probably be green beans, mashed potatoes and maybe a salad.
I'm having Christmas lunch at my house - here's my current plan for the 7 of us:
- Ham
- Ravioli (DH's fam is Italian)
- Mashed Sweet potatos
- Brussel sprouts sauteed with lime
- bread
- maybe an orzo and rice salad
For apps there will be an anti-pasto plate with cheeses, sliced meats, olives, and sweet peppers and for dessert I'm not sure yet.
This is what I did for Thanksgiving, generally Christmas is similar but we do Ham and add lots of cookies for dessert.
Appetizers:
- An assortment of cheeses and crackers
- Blue cheese stuffed dates wrapped in bacon
- Caramelized onion puff pastries
- Baked Brie with Brown Sugar and Walnuts
Side Dishes:
- Asparagus with Hollandais sauce
- Cornbread Casserole
- Smoked Gouda and Bacon Mac and Cheese
- Dressing (that's stuffing just not in the bird)
- Smoked Gouda Mashed Potatoes
- Green bean casserole
- Roasted butternut squash with blue cheese and walnuts
- Orange Cranberry sauce
Main Course:
- Rosemary Chicken with Apple salad and pearl onions (I hate turkey)
Dessert:
- Pumpkin Pie
- Blackberry crumble

It's just my husband and I for Christmas this year..
For Christmas Eve we're just doing munchies--
Wings, spinach & artichoke dip, meat/cheese/cracker/mustard tray, assortment of fruit, chex mix, oreo truffles, ginger cookies, and we're going to decorate sugar cookies!
For Christmas Day dinner--
Maple & brown sugar glazed ham, mashed potatoes & gravy, balsamic glazed carrots, winter fruit salad with lemon poppyseed dressing, dinner rolls. And for dessert- pecan pie and chocolate pie.
