Potluck Ideas

So my office is having a pot luck lunch next Tuesday. I'd like to volunteer to bring a "main dish" because that's the least popular category.  I've already thought of lasagna, baked ziti or stuffed shells, but they all seem pretty lame. Does anyone have other suggestions? TIA

  • CHILI!!!!  everyone loves chili.  you can bring in yummy toppings--sour cream, cheese, scallions, etc.  I would LOVE chili.

    Homemade Mac and Cheese!  Who DOESNT like this??

    Enchiladas!   Yummmmm.

    Different kinds of meatballs--one sweet and sour (swedish) meatballs and one in a marinera sauce (and you can bring hoagie rolls for people to make sandwiches with if they want).

    You can make a few different pizzas too. 

    ETA: a pesto and chicken pasta dish.  I like FRESH real pesto (non of that jarred crap) with a bunch of pasta and sauteed chicken and some broccoli.  This can be served hot or cold.   and SO easy (even if you have to make your own pesto!)

  • Spiral-cut, glazed ham.

    It's super easy, festive and come on..it's ham. Who doesn't love ham?!

    Add pineapple and cloves to make it look like you actually did something.
