On Xmas, we are having DH mother, grandma, grandma's FI and possibly DH's aunt.
What can I make for lunch? We wont have a lot of prep time, and the day before we are gone as well.
Any ideas?

How do you make this?
I'm not sure of the kind she makes but I make an egg casserole. Really easy, I don't have the exact recipe with me but this is how I usually make it. I've tweeked it throughout the years.
1 dozen eggs
2 cups milk
1/2 stick butter (recipe calls for 1 stick but I made it with less one time and it was so much better, the butter just makes it more greasy to me.)
1 loaf bread
Shredded cheese
ham (I use lunchmeat ham). You can also use sausage or bacon but thats too greasy for me.
Use a 9x13 greased baking dish. Cut the crust off the bread and then slice the bread into 3's. Layer the bottom of the dish with bread. Then layer cheese and ham. You can use anything really in this middle layer, veggies are also probably good. Then put another layer of bread. Mix eggs, milk, and melted butter. Pour over the bread. Let sit overnight and bake the following morning/lunch. Usually takes about an hour and 15 minutes depending on the temperature.
