Super Green..canning question

Did you do anything with cranberries?  I have a LOT leftover still from thanksgiving hanging out in my fridge.  (raw not cooked) I was thinking about making a jam and or some cranberry bread.  I wanted to check with the "canning goddess" for any recipes before I use a couple I found online.

(maybe for Christmas santa will bring LT a ball caning book)

  • I know you didn't ask me, but I made cranberry apple jam with my left over cranberries.  It was a little bitter for my liking but a few of the people I gave jars to loved it.  In general I don't like cranberries, though.
  • Hello!  Sorry for not answering sooner, I was out of town for the holidays.  We don't can cranberries, we dehydrate them.  Dried cranberries are AWESOME in granola.  You can also freeze the whole bag and use frozen cranberries to make great whole berry cranberry sauce.  Add a bag of frozen cranberries, 1 cup water, and 1 cup sugar to a saucepot.  Stir to dissolve the sugar.  Boil hard until most of the cranberries pop, about 10 minutes, let cool completely.  It's SO GOOD.  We have whole cranberry sauce regularly throughout the year, usually with roasted chicken.
