our christmas dinner was all new recipes for me and they were seriously awesome!

i got a smaller piece so i just cooked it 15 minutes/lb so it would be rare/medium rare. i also used veal stock instead of beef stock for the au jus.

i halved the recipe, cut back on the butter, and added some sour cream. these were the best mashed potatoes i've ever made and i think i may like them more than my aunt suzanne's (which i love, love, LOVE). i also love that they can be made the day before, just had to reheat on christmas day.

I do that every. single. time. I make mashed. Love, love, love them. I would much rather lick a spoon with mashed on it than a spoon with brownie batter, YUM-O.

i laughed out loud when i read your post about V eating all the leftovers and asking for more, that is one to tell when she gets older! we have like 2 pounds in the freezer and i think i'm just going to make a really big steak when we feel ready to eat hunks of beef again.
