Critique my menus for this weekend

I've so over-committed myself lol.  Anyone have an oven I can borrow?  Whew.

Early lunch for 7 family members on NYE day

Homemade mac & cheese

Baked chicken

Steamfresh veggies

Dinner for 7 early on NYE

Pot roast

Salad

Rolls

NYE party food for ~15

Mushroom pinwheels

Tomato-bacon-swiss tarlets*

Carrots with light vegetable dip

Prosciutto crostini

Celery trefoils (fancy celery with cheese :P)

Shrimp cocktail

Cowboy caviar with Fritos

Spinach & artichoke dip (volunteered by an aunt)

Cracker spread

Mini Tollhouse pies

Cheesecake (a Harry & David gift)

Brunch for ~10 on NYD

Spinach and cheese strata

Bacon 

Lemon poppy seed muffins

Warm fruit compote

[Please suggest other items since this won't feed 10 - another bread? sausage?]

NYD football food for 10? 15? Hell, IDK, no one RSVPs for anything ;)

* Yall would think I make them all the time since I always post them on here, but I always change my mind at the last minute.  I haven't actually made these since NYE 2007-8 lol.

6fsn, I think you've given me your "think light, people eat heavy during the holidays" mantra, so many of the recipes are lightened or healthier.  I know I feel like a blimp right now after a few days of Christmas foods.

  • I think you should add something else to the pot roast meal...some type of roasted potatoes or veggies or something. Maybe even like a hot fruit salad or something.

    I think you could just do bagels or something easy like that for breakfast.

  • For lunch- If you want to skip the baked chicken and just do deli sandwiches I think you would be just fine.

    I assume the pot roast has potatoes and carrots in it for dinner.  If you want, make extra and shred it up for pot roast sandwiches sunday. 

    For breakfast- scrub up some redskin potatoes.  Chunk as needed and roast along with the stratta.  Easy peasy and potatoes ALWAYS round out a meal.

    Something to put in your hip pocket for NYE or day after:

    1 sack microwave popcorn

    2 T butter

    2 cloves garlic

    2 t chili powder

    1/2 t hot sauce

    salt

    1/2 cup honey roasted nuts

    Put the butter in a small dish with the spices and microwave to melt.  Pour over the popcorn and toss in the nuts. 

    Easy ingredients to keep around and it takes 5 mins to put together.

  • I think your menus sound really nice, but I always feel the need to add SOMETHING ;)
  • You are going to be one tired lady on the 2nd!

    For brunch I think I'd add potatoes- either the red potatoes previously described or a hashbown bake. I'd also add fresh yogurt and granola.  People could even put the warm fruit compote (which looks delicious- I'm going to have to save that recipe) on top if they wanted to.  I think bagels and cream cheese could also be a good addition.

     For the NYD football party I'd think about having something simple like chips and dip or tortilla chips and salsa/guac on hand in case there isn't much left from the night before.  I'm sure you'll have plenty left but I worry about things like that and wouldn't want to have to run out in the morning.

    If you get more than you expected... can always order in, make popcorn etc. 

    BTW - I'm appalled that people don't RSVP.  What is wrong with them?

    2) The menu looks good but I agree w/ a pp about adding a side with the pot roast dinner.

  • Lunch NYE - I would also suggest deli meats instead of the baked chicken.  You could buy more than you need and put out for the foot ball game.

    Dinner NYE- I had the same question, are you including the potatoes and carrots in the pot roast?

    NYE party - looks yummy!

    Brunch NYD - instead of the potatoes, I would do roast some fresh asparagas spears  or other green veggie as opposed to the potatoes as you already have the muffins on the menu.

    NYD Football - sounds good!
