We did a Dr. Seuss theme party last year for DS and DD. Instead of trying to find Dr. Seuss themed food, I just incorporated Dr. Seuss in our decorations. I decorated with Dr. Seuss books, had cupcakes w/primary color sprinkles and made Dr. Seuss cupcake toppers, primary color tablecloths, napkins, plates, balloons, found Dr. Seuss book characters on the internet, printed and laminated them and then incorporated them into a Happy Birthday banner. It turned out super cute!

I threw a Dr. Seuss baby shower last year. Not all the food fit in, just a few items. For green eggs and ham I did spinach quiche with a canadian bacon shell (instead of pie crust). Made them in a muffin pan and they were super cute! (And easy and relatively healthy.) Also did pink ink drinks: thawed frozen strawberries and poured either champagne or sprite over them (it was a brunch shower). I did a candy bar as the favor that was all red and blue. PM me your email and I can send you some pics if you want. I also bought a lot of decor stuff online (like a 4ft cat in the hat, napkins, etc.)
I like the rhyming idea for the menu pp mentioned too! Seems like a great way to incorporate non Dr. Seuss themed foods.
We did a Dr. Seuss themed party for our son's first bday. Here is a few ideas of what we had:
Roast Beast sandwhiches= roast beef sandwhiches
Green eggs= white chocolate dipped pretzels with a green M&M placed on top
Thing 1 and Thing 2 cupcakes with blue cotton candy hair
