Recommend your non-stick cookware please

I'm in search of new cookware and would love some recommendations.  I'd like something of good quality and I prefer non-stick.  Thank you for your advice!

  • Calphalon One or Calphalon Unison.  I am a serious cook.  I have C. One, its great I love it (& I am normally not a fan of nonstick cookware b/c it doesn't brown/crisp well but I get beautiful browning with my C. One).  C. Unison is the newer "improved" line.  They say Unison is dishwasher safe (One is not) but generally it is not recommended to put any nonstick cookware in the d/w.  Both are rated oven safe to 500 degrees i think.  Definitely check it out.  I suggest u buy one piece & try it be4 buying a whole set.
  • Teflon was originally designed as a replacement for CFC refrigerant...not exactly something you want to be eating as it flakes off into your food over time.  The gov't says it's safe, but they've also said lots of harmful things are safe.

    I have All-Clad stainless steel, and with a quick shot of Pam, everything's non-stick.  The investment's worth it and they'll literally last the rest of my life.  You can sometimes find them at TJ Maxx and Marshalls.  I only have 4 pieces - large and small frying pans and large and small sauce pans - and that really does almost everything.

    C'mon, Tarheels, Teflon is SOOO 2005. Lol. Seriously though, calphalon pans are anodized aluminum, no Teflon or other carcinogenic. I have these and I highly recommend them.

  • further to Tarheels' comment -- I have All Clad stainless AND Calphalon non-stick.  They're just not the same, its nice to have different tools for different uses.  I have select open stock pieces of each (no whole set of either).  I find pam makes a mess, difficult to clean, especially if it gets overcooked which often happens on that part of the cooking surface not covered by the food.  Pam is not recommended for hi-end cookware.  When using my AC stainless I use paper towel to lightly coat with oil, or I use butter.  I almost always use my nonstick for eggs and fish, also sometimes for boneless chicken breast.  (even with nonstick, a little oil or butter is usually needed for flavor, less is needed than with regular stainless) The nonstick also makes clean-up a breeze.  Abrasive cleaners are not good for either the C non-stick or the AC stainless.

    Ha! lol  I'd forgotten about anodized aluminum as an option - it has been years since I chose my pots.

  • P.S. 1 more thing - Calphalon makes many different lines of non-stick cookware.  Be sure to get the One or Unison - these are the professional-grade top of the line. 

    Also, nonstick is what Calphalon does - they are known for it and for developing the newer non-stick technology/design.  All-clad is known for stainless steel & copper, they are not the go-to brand for non-stick.

  • P.S.P.S. - more - use non-stick for making bacon or burgers on the stove top, its great - comes out brown & crusty, burgers moist/juicy on the inside, no added oil or butter needed - just heat the pan & throw the meat on, & clean up the pan is a breeze (splatter on the stove is another matter).   this made me a convert to non-stick.
  • Thank you for your help.  I was leaning towards the Calphalon.  I have a lot of friends who own the Calphalon Contemporary. I saw the Infinite Circulon and I am trying to compare the two now.
  • We have the Calphalon Contemporary SS and love them.  We have no problem cleaning them.  If anything seems stuck a little BarKeeper's Friend cleans it right off.  Even though most non-stick is no longer teflon I'm still not crazy about having it in our kitchen.

  • Calphalon Contemp is not same as One or Unison.  One & Unison are higher grade I believe.  Circulon is also not same quality - don't like it.
  • I would second all those that recommended Calphalon. I love mine. 
  • I have a pulled together (not sold together) set of Calphalon One Annodized Aluminum, and one nonstick pan for omelets.  I buy a cheapish nonstick b/c it gets scratched either way (hubby uses it most and is a bit brutal.)  There aren't that many foods that wouldn't benefit from a little sticking :-)
  • Calphalon, but the pricier one, not the one that's sold at Target. One of the lines has a lifetime guarantee...that's the one I have.
