New diet help... :)

Hey ladies, 

I dont know if any of you have any ideas or not-BUT thought I'd ask. My Dr. recommended that I start eating a low carb high protein diet because apparently my triglycerides are high...but I only know some "things" to eat-not meals.... DH wont want to "diet" but if I can find some meal choices that I can make for my diet that he likes...that would make it easier because I am the one who makes dinner (almost) every night... TIA ladies!

  • DH and I rarely eat carbs at dinner time. I usually just do a meat and veggie. It makes cooking tough and boring. I like spaghetti squash to trick myself. If I'm really craving something, I'll do wheat pasta or rice and try to just eat a little of it.
  • We really don't do carbs at dinner, save for pasta 1x a week (in the grain sense anyhow) and I don't miss them at all- my H is a diabetic so he has to be careful.

    We eat a lot of salads, various veg, fish/chicken/meat/tofu/legumes like beans. Quinoa is an excellent grain.

    An example of meals for the week would be: -

    steak, with a pea shoot saute, brown rice for the kids and broccoli (kids fave) 

    salmon, green bean salad  and roasted red peppers with a whole grain bread or baguette for the kids

    chicken and sausage casolette, chard on the side

    tofu shrimp and eggplant stir fry with gai lan

    turkey burgers with apple,celeriac and cabbage slaw, sweet potato fries

    pasta night, whatever H whips up for the kids

    soup and panini sandwich or Quinoa salad (we make a big batch with varying ingredients and some sort of protein to have for lunch or dinner in a pinch)

    - kids make your own pizza night with spinach and berry salad, i typically have sushi and the kids will edaname with their salad or I have something like nicoise salad

    keep in mind though, that 80% of these meals involves me and the kids since my H is typically working, and, when he cooks he can toss together any number of things minus a typical starch and it is amazing! Perk of being married to a chef..

  • My doctor had me do this when I was in college to help recover from my bout of EBV... 

    At the time I was a vegetarian and started eating Chicken per the doc's orders.  So I would eat Chicken (prepared in a million ways) with a side of veggies (usually steamed broccoli with some Mrs. Dash added to it) or a salad.  I stopped eating rice, potatoes, pasta and bread.

    I also snacked on peanuts/nuts etc.

    Now I try to stick to this as much as I can for dinner.  No carbs (breads, pastas, rices, starch) and I eat 3-5 oz of protien (chicken, beef, pork, fish, turkey etc) and then eat ALOT of veggies.

    I do eat potatoes (sweet or whatever) but I try to only do this 1-2 nights a week.

  • Christina... can you email me a few of your Chicken ideas? :) I'd LOVE variations-I'm stuck on a few things=Rut! Thanks for the advice-it really will help!

  • I will see what I can dig up, but either way I'll email you some ideas.
  • I follow a primal/paleo eating plan.  It's a high protein/low carb (no grains or beans, just meat, veggies, fruits and nuts.

  • I love Tastefully Simple seasoning for chicken and tilapia.  I specifically like the dried tomato and garlic pesto, the Italian garlic bread and the sweet bell pepper.  I put this on frozen chicken/fish, spray with a little cooking spray, wrap in aluminum foil and bake in oven until done.  So easy and simple and so good!

    You could even do like a bruschetta topping for chicken (tomatoes, red onion, etc) or a sauce to change it up.

    It's hard to come up with ideas for meals no matter what kind of diet/healthy plan you are following, but with a little creativity (or just googling on the internet like I do!) you can come up with a lot of ideas!!!  I think the biggest thing is to be prepared.  If you have a plan to follow, it makes it a lot easier.
