Just curious what you made for dinner last night with the chicken breasts?

I decided to figure out what I could make with stuff I already had at home. I'm terrible about using up leftover ingredients to other recipes. So at home I had a little leftover ricotta cheese & a few pieces of prosciutto. Those are pretty expensive ingredients to just let waste away, so I decided I had to use them. I ended up making chicken breasts stuffed with spinach-ricotta mix, wrapped in prosciutto & then baked for 30 minutes. They were really good and I got to use up the last of those ($$) ingredients!
I am definitely making the pesto chicken you suggested, though! We usually have pesto on hand, but last week we used up the last of ours & I really didn't want to go to the store if I could help it. Your idea sounds delish & right up our alley, though. Thanks for the suggestion!
