After Jenni said she won her chili-off by making your Halloween Chili I decided I had to try it out.
I'm so glad I did. I think we've gotten like 10 meals out of it. Seriously, and my H LOVED it. So did I, but not as much as he did. lol.
We had so much left over (since it's just the 2 of us) and H must have had it 4 times for lunches. We still had a lot left over and I didn't want to just throw it away, so I made a chili-corn casserole I found on the Food Network website. You layer 3-4 cups of chili in an 8x8 pan, then you saute corn & scallions and put half of the mix on the chili, followed by a layer of Jack cheese (yum!). Then you get an 18 oz. tube of premade polenta, slice the polenta into rounds and place it on top of the cheese/corn. Then top with more cheese, and finally with the corn mix, & bake for 20 minutes at 475.
It was SO good! I can't say the polenta adds a whole lot in the way of flavor, but it definitely adds something, more substance maybe? I read some of the reviews and some people topped theirs with corn bread batter and baked it longer then directed so the corn bread baked up. I may try that method next time.
I also learned that I do not have a big enough pot to make this chili in! The one I used was literally filled to the brim. LOL. I had a moment of panic and I was pouring in all the beans.
