Anything with cheese is not vegan. It's possibly vegetarian, if the person is a lacto-vegetarian.
OP, do you like the meat substitutes, like tofu, seitan, etc.? That makes it easier to give suggestions.
Also, there are quite a few vegans on the Pets board, you could try asking there.
Umm....I knew that. I figured anyone vegetarian like myself wouldn't need an explanation as to what is vegetarianism versus veganism, even though the link points to a cheese fondue. I just happen to have been looking at that when I posted it.

I was thinking of some kind of pasta with pesto sauce for the main course. For the salad, some kind of spinach salad with a vinegarette. For soup, french onion. And for dessert peanut butter "cheese" cake.
Thoughts?
Vegetarian Minestrone with a soy substitution for the parmesan. It is great with homemade bread and spinach salad with a lemon vinagrette.
Pressed tofu in a ginger-soy marinade with baked sweet potatoes and apple -romaine salad with apple cider vinagrette.
Fire roasted tomatoes with white beans over pureed cauliflower.
My husband's favorite desserts involve cheese so I am no help there.
I am making spaghetti and "meatballs" (veg meatballs from Trader Joes), salad, and this fabulous butternut squash soup with ginger and coconut milk I've just created. Here is my recipe.
Cut 1 butternut squash in half length-wise. Scoop out seeds, place face down in baking dish and add a few tbl of water. Bake at 375 for 1 hr to 1 1/2 hr (You want it to get very mushy. Over cook it!). Allow to cool, then peel. Heat 1-2 tbl olive oil in large pot, add 1/3 cup chopped onion. Cook until soft. Add squash and 1-2 cups vegetable broth, 1/3 cup light coconut milk, 1 tsp grated ginger, salt and pepper. Ladle into blender (or use immersion blender) and blend until velvety smooth.
