I'm looking for some interesting Apple recipes since we will be apple picking this weekend. Not like apple crumble, cobber, pie, etc. - more so like salads and side dishes for dinner and lunches. Bonus points for non-creamy sauces!!!

I don't have any recipes on hand, but I once had an apple & fennel salad (with parmesan, I think) at a restaurant. It was awesome. We also made a decent chicken recipe a while ago that involved braising the chicken with apples, onions, and apple cider.
I'm sure you could find recipes for those dishes online somewhere.
You could also try homemade applesauce or apple muffins.

Apple-Cabbage Skillet Dinner

You can make the best apple martini you've ever had:
- core 2 apples and chop them into small pieces 1/2-3/4" sq or so
- toss in blender or food processor with and ounce to an ounce and a half vodka, and approx 2 oz club soda, selzer water, or water
- puree it till its mush then run it thru a fine strainer, nylons, or cheese cloth
- put the juice in a cocktail shaker with CUBED ice and mix it with 4 oz of vodka and a splash of Triple Sec (or cointreau)
- shake and strain into 2 chilled cocktail (martini) glasses
salad with apples in it (sooo yum):
Dressing: 2/3 cup oil (half olive oil works well)
1/3 cup lemon juice
2 Tablespoon minced onion
2 Tablespoon poppy seeds
1/2 teaspoon salt
1/2 cup sugar
1 tsp dijon mustard
Break romaine lettuce in peices
1 large apple (or more)
1 large pear (or more)
1/4 cup craisins
1 cup pecans (candy them in a skillet with a little white sugar and keep stirring until sugar melts and they
are coated and crunchy) Too long and they will burn.
4 oz. (1 cup) swiss cheese shredded
