White Chicken Chili: Recipe rave

Made this tonight and it is so so good!

Quick White Chicken Chili2 tbs vegetable oil1 onion, chopped2 poblano chilies, seeded and chopped2 jalepeno chilies, seeded and chopped fine4 garlic cloves, minced2 teaspoons ground cumin1 (16 oz) can of cannellini beans, drained and rinsed3 cups low sodium chix broth1 rotisserie chicken, skin discarded, meat shredded into bite-size pieces (about 3 cups)1/4 cup juice from 2 limes1/2 cup chopped fresh cilantrosalt and pepperavocado for garnish
1. heat oil in large dutch oven over medium high heat until shimmering.  cook onionpoblanos, and jalepenos until soft (6-8 mins).  add garlic and cumin and cook until fragrant (30 seconds).  Stir in beans and broth.
2.  Remove 2 cups of bean mixture from pot and puree in blender until smooth.  stir pureed bean mixture back into pot and bring to a simmer.  cook over medium heat until flavors meld and chiles are tender (about 10 minutes).  
3.  Stir in chickenlime juice, and cilantro and cook until heated through (about 2 mins). season with salt and pepper and serve.  


Note: if you can't find poblano chilies, you can substitute one green bell pepper and 1 to 2 tablespoons of minced jalepeno PER poblano
