MRSJASON and others looking for recipies

Sun-dried Tomato and Feta Stuffed Chicken (SBD Phase 1 eligible)

1/3 cup reduced fat crumbled feta (I use a whole container)

2 sundried tomatoes chopped ( I generally do more to taste)

1 clove garlic chopped

4- 6 oz chicken breasts

2tsp  Olive Oil

 

Heat oven to 425F.

Butterfly the chicken breast.

Mix Feta Sundried tomato and garlic

Spoon feta mixture into chicken and close chicken.

Drizzle with Olive oil, sprinkle with Salt and pepper if you desire

Place on pan and bake for 20 min

 

Oven Roasted Broccoli (SBD Phase 1 eligible)

 1 Large head of broccoli

1 small red pepper

 Olive oil 

Italian Seasoning

 

Chop Broccoli into bite size florets.

Seed and Slice Red pepper

Toss in bowl with olive oil and seasoning

Dump on pan and put in over for 10-15 minutes until broccoli is soft

 

Roasted Tomato Soup (SBD Phase 1 eligible)

*** Is good cold too with some cucumbers for gazpacho)

2.5 lbs plum tomatoes

1 med onion diced

4 cloves garlic smashed

Olive oil

1 cup vegetable broth

 

Heat oven to 425F

Cut tomatoes in half and place cut side up on pan

sprinkle garlic and onion around tomatoes on pan drizzle with olive oil salt and pepper

 roast for approx 40 min until tomatoes begin to collapse

Transfer contents to blender, carefully add 1/2 of broth and blend until smooth

add to saucepan with remaining broth and heat until warm.

 Serves well with toasted pita wedges (for phase 2 of SBD)

  • Ooooh!  Thanks!  I must try the chicken tomorrow night!  All I need is some sun dried tomatoes!  

    I hate the first few days of the SBD.  I crave sugar and it kills me not to give in and run to the gas station and get a candy bar!!!  But once I can detox my body of sugar, everything will be a-ok!

  • I also use to eat a lot of shrimp and fish while on SB.

    I would make a spinach salad, (spinach, turkey bacon, onions & mushrooms ) tossed in Olive oil and balsamic vinegar and then overly season some shrimp and toss it on the salad. I ate that almost every day for lunch. even in phase 2 I would just add a piece of fruit with it.
