Appetizer Recs

Hiya!  Happy Hump Day!

We're having a potluck at work next week for the Superbowl, and we're all supposed to bring appetizers.  I'm not really sure what to make b/c reheating options are limited to the microwave...unless I make something in the crock pot; but I don't know of many crock pot appetizers.

Any suggestions for crock pot apps or apps that can be served room temp/cold?

  • My go-to appetizer is Cowboy Caviar.  It is always a huge hit no matter where I take it!

    3 tbsp. red wine vinegar

    1 1/2 to 3 tsp. hot sauce (I use Red Hot)

    1 1/2 tsp. vegetable oil

    1 clove garlic, minced

    1/8 tsp. pepper

    1 firm avocado, cut in small cubes

    1 can black-eyed peas

    1 can corn

    2/3 cup green onions, thinly sliced

    2/3 cup fresh cilantro, chopped

    1/2 lb. roma tomatoes, chopped

    1 bag tortilla chips

    In a large bowl, mix vinegar, hot sauce, oil, garlic, pepper, and avocado.  Gently mix.  Drain and rinse peas and corn.  Gently mix in peas, corn, onions, cilantro and tomatoes to vinegar mixture.  Add salt to taste.  Refrigerate at least 1 hour.  Serve with chips.

    **You can adjust the amount of things to make it to your liking.  I usually add more vinegar, more hot sauce and more salt and pepper.  I also really love avocados so I usually use 2 instead of one :)

    i definitely vote buffalo chicken dip. i use regular chicken though and boil and shred it myself. the canned chicken smells like tuna and makes me gag. i always add garlic, extra ranch, buffalo sauce and lots of cheddar cheese instead of mozarella. mmmmm.

    This was going to be my suggestion too. Stacy made if it for a gtg once and it was soooo good! oh and Kristie had it at Brady's party and I was allllll over that! haha

  • I know this is going to sound gross, but I swear these are addictive and at work, we call them "crack balls".  They are soooo good.

    2 12 oz jars Heinz chili sauce
    1 32 oz jar grape jelly
    1 bag meatballs (about 80 in a bag)
    Put chili sauce and jelly in a large pot, heat until jelly is melted and sauce is smooth, stirring often. Add frozen meatballs; heat until meatballs are thawed and then simmer for 3 hours.
     
    I usually do the spinich dip on the back of the Knorr Veggie soup mix box (don't use the spinich soup one, because this is just a gross recipie).  I don't use the watercress, but  everything else I do.  I usually put in extra green onions (I think they suggest like three and I pop in a whole bunch as tied together by the grocery store).  I put all of this in a shepharders bread bowl (I don't like the tangy taste of sour dough with spinich dip) and bring like that.  That way you have no dishes to bring home, wash or pray you get back from the party host.

  • If you're looking for something really simple, lil weenies/smokies in bbq sauce is good.  All u do is put a pack of the smokies in & then bbq sauce to cover.

    This is amazing and my go to appetizer!

    Yep, I make this ALL the time but I don't put crumbly blue cheese or shredded cheese. It's amazing and everyone loves it. I use the chicken in a can because it's easier and tastes great in everything. It's a little pricey though.

    I think I gave you the recipe the other day. Make it and then put it in the crockpot and keep it on warm while you're at work. It'll be a HUGE hit!

    So yummy, it looks elegant and it's super easy to make!  You can even make it the night before, just wait until served to drizzle the oil and vinegar on it.
