Salsa verde chicken - question (not salsa related)

So I see it calls for 6 cups of cooked, cubed rotisserie chicken. Anyone have an estimate on the size of chicken I need for that amount of cooked meat? Did one chicken do it or did you need 2? What size chicken did you get? 

I'd like to make this one night next week I think but wasn't sure on the amount of chicken I'd need!

  • Found this answer on Answers.com -- According to several different websites, a 3 pound chicken yields about 4 cups of cooked chicken. Of course, it depends on how good you are at getting the meat off the chicken, and you can also use the carcass to bake a nourishing chicken broth.

     

    So, you'd likely need 2 birds for a full 6 cups.

  • I personally just used 1 chicken and it was plenty so...I didn't measure it, just used the 1 chicken.
  • I used 1 4 lb rotisserie chicken the first time I made it, and did not get a ton of meat from it.  The second time I made it I just used chicken breasts that I had previously boiled and cut up.  It really doesnt have to be a rotisserie chicken.  I feel like they cost $6 and you can buy a package of chicken on sale for cheaper than that and get more meat....I think Pam did something similar

    This is what I did.  Just boiled some chicken breasts and then cut them up.  I think I used about 1.5 lbs of chicken breast, and didn't bother measuring how many cups it was.

  • Thank you ladies! I was thinking that I could get chicken breasts on sale cheaper, and since I like having them for chicken salad, etc., I think that's the way I'll go then!

  • I usually just poach some chicken. I do three or four breasts.
