    I hardly ever have a set recipe when I cook. I mostly just come up with ideas & eyeball things, but this is super easy. When you buy a corned beef brisket at the store, a lot of times it'll have a little seasoning packet in it so you won't have to add anything else. If not, I just use about half a tablespoon of whole peppercorns & a few bay leaves. Since it's just the two of us eating, I got a small brisket (like 2 and a half lbs.) and there was enough left over for us to have it again tonight (score!). I peeled 2 big potatoes & cut them into slightly larger than bite-size pieces, and then peeled a pound of carrots (big ones or baby ones work). I cut a small white onion into big chunks (they separate while it's all cooking). I put all of it in the slow cooker, made sure it was covered with just enough water, and left it on low for like six hours before adding a small cabbage (also cut into big chunks), and cooking another hour to hour and a half.

    It's like 15 minutes of cutting & peeling & then like 7 hours of finding other stuff to do. My kind of dinner! :)
