As for parks, the Crossings is a great park.  There's a big playground and a pond and lots of area to have picnics and whatnot.  Right now the pond is frozen so there's a skating rink there. 

Shopping - there are 2 malls, Crossgates is the closest and Colonie Center is a little farther but both are nice and have lots of stores and movie theaters.  There's Hannaford and Price Chopper there for groceries.

Can't help with Dr's since I don't go to any in that area.

I can only help you with resturants and shopping...

Resturants: 

Albany: dp's, the pump station, brown derby

Guilderland: Creo, Mezza Notte

Saratoga (a bit of a drive depending on where the are): Chianti, Mexican Connection (there is one in albany too), grey gelding, forno bistro

The list could go on and on.  If they have specific foods they like, I'd be happy to try and think of a place I've been by them...

Shopping:

Colonie Center (in colonie, obviously)

Crossgates (guilderland)

Stuyvesant plaza (albany/guilderland)

I have to plug my family's Greek Restaurant -- Athos.  It's on Western Ave.    I also like Provence in Stuyvesant Plaza, and The Standard at Crossgates Mall.  There are a million other good restaurants in Albany and Troy, so once they get familiar with things right around them, they can explore more.

I also 2nd Stuyvesant Plaza for shopping. 

And I love my Dr and Dentist, which are both right near Guilderland on Western Ave in Albany.  Prime Care on Western Ave and Dr. Pastrana (dentist) on Schoolhouse Rd.

One more thing!  For recreation, they could visit the Albany Pine Bush Preserve.  There's a visitor's center there that is great for kids.  They usually have a lot of activities each month for kids and families.  It's on New Karner Rd. between Western Ave and Central Ave.

There are lots of great things to do in the Capital Region, I'll just suggest what are probably what stand out the most for Guilderland specifically:

Restaurants - everyone near us raves about Chef's Takeout, Akanomi or Hana for Japanese food, Pizza Gram has great pizza

fun for 2 year olds - Guilderland YMCA, Fun4Tots.. further there is Tumbling Tykes, Tiny Tots Tea Room (you can google all these)

shopping - Crossgates Mall is among some of the biggest in the Northeast.  There is a really great kids consignment shop right in Guilderland

I live in Schenectady but our pediatrician in in Albany and I wouldn't trade her for the world. We go to the Albany Medical Center Pediatric Group.

The Italian restaurant we go to is Delmonico's on Central Ave. The food is great and the prices are nice. We almost always get the Portabella Mushroom Parmigiana appetizer.

Depending on how far you are looking, there is an excellent place in Troy called The Irish Mist. It has a pub atmosphere but the food is wonderful.

That is all I can think of off the top of my head for recommendations.
