What are you making?
I had a bit of ice cream last night after dinner and I thought I was going to die of bliss. I cannot do the South Beach diet anymore, it's killing me. So just eating healthy and watching calories/portions will have to do.
homemade tomato basil soup, and grilled cheeses. YUMMMMMMM.
plus, i get to use my immersion blender, which makes me giddy like a child.

I'm fixing grilled lemon pepper tilapia, brown rice, broc., and salad.
would you mind sharing the recipe for the soup?

not at all
chop up half an onion really finely, i just toss it in the chopper.
cook that in a few teaspoons of olive oil for about 3 minutes
chop up a carrot the same way, add it to the onions and cook about 5 more minutes.
add a 14 oz can of diced tomatoes...we've used fire roasted with garlic, and diced with basil and oregano. but i like tomato-basil soup the best.
fill the empty can with vegetable broth, or chicken broth, and add it to the pot.
bring it to a simmer, and cook for about 20 minutes
season with salt, pepper, garlic, herbs...whatever you want.
immersion-blend it until it's the texture you like.
it would be fine this way, but i add a half cup of cream to make it even more delish.
and then i top it with a little shredded italian cheese.
it's super easy, super fast..and YUMMMM
