What's on the menu. Help!

We aren't going out this year and we want to cook a meal together ("and no distractions" as my dh says, lol).

  • I'm doing scallops with a sweet cucumber and mango salsa with a hot chocolate cake for dessert. New recipes both, but they sounded tasty!

  • I'm not doing a Valentine's dinner but some things that may work well for you:

    Seared scallops (I skipped the salad part)

    Creme brulee (you can use regular sugar instead of vanilla sugar; don't skip the water bath.)

    Macadamia-nut crusted fish (I used halibut and a mixture of macademia nuts, almonds and pecans - turned out amazing; I skipped the salsa part.)

    Flourless chocolate cake (really easy to make, and goes well with whipped cream, fruit, chocolate sauce, whatever.)

    Martha's Mac and Cheese

    Roasted broccoli

    They all really are good! I made the fish and broccoli for DH before and he loved them. The mac and cheese takes some work but it was a huge hit at Thanksgiving. Total comfort food.

  • I'm making my smoked gouda mac and cheese, some mozzarella/pesto/garlic bread, and then picking up whatever looks super good for dessert at Whole Foods.
  • Yum. I am doing a homemade scavenger hunt after dinner and the first stop in this Italian (Caffe Pascucci) coffee place that sells really nice desserts.

    I am not a baker, so buying something decadent hopefully works!

  • DH has yet to choose our menu but I think we will be doing this:

    Meatloaf "cupcakes". So mini meatloafs in cupcake sizes with mashed potato "frosting".

    the roasted broccoli recipe looks great so I think that will be our side dish

  • Chicken Parmesan and salad. It doesn't require me to slave over a stove, but it's an upgrade considering what I make during the week.
