OK girls! here it is! ( I got a little photo happy)
it's more or less a recipe I came up with to use up the bottle of tequila rose that was in my frig (the first time I made it) and it was hit so I keep making it now! I cheat and use a box cake mix, but make the frosting from scratch.
I use a box of Strawberry cake mix , and follow the directions on it i use all the wet ingredients Plus a shot or two of the tequila rose.
I make it in two 8' round pans so butter and flour the pans good, split the cake mix in to the two, and bake for time listed on box.
I use two packages of cream cheese at room temp. and about 3 cups granulated sugar and some more Tequila Rose!
Put the cream cheese in the mixer and a cup of sugar and turn it on low and as it's mixing and in some tequila (I just pour it right from the bottle in to the mixer) and as it mixes and start to form a thick frosting add more sugar about a cup at a time, and the same with the tequila just add a more every time you add sugar. it will also help give the frosting a pink hue!
Once it's fully mixed it should be smooth you can put the frosting in the frig to keep it the right texture . back to the cakes that should be done and cooling
I like to make my a layered cake so you have to cut the tops off the cakes, try to get it as even as possible!
then frost the cut side ( this is were you can fix the cake if you didn't get the cake top cut off even!) just add more frosting to the side that's not even. and I add sliced strawberry's to middle part too.
Do the same with the other cake, cut the top off and add frosting and then place frosting side down on the other half
and frost all over! And add more strawberry's!!! should come out something like this! and in to the frig it goes ( cream cheese doesn't like to be out long! lol)
