Boneless chicken breast recipe?

Looking for inspiration...

I took some out for tonight with the intent on making a recipe and then didn't have one of the main ingredients (D'oh!).

So what are your favorite things to do with chicken?

  • I made the Ranch Chicken last week and it was really tasty. All you need is ranch dressing and breadcrumbs.

  • made chicken cordon blue last week that was yummy.  the cooking light website has a bunch of good recipes.

  • garlic cheddar chicken from pam's site is easy and great

  • I made up a crock up sweet & sour chicken Monday night that was really good.

    I cut chicken into bite size pieces, combined with a bottle of the lachoy sweet & sour sauce and turned it on high for about 3hrs, then added pieces on red pepper and a can of pineapple chunks and let it cook for another hour. I served it over rice.  it was really yummy & easy.
