Recipe? Pineapple Pico de Gallo

We have a pineapple and I thought of this the other day, but have never tried it.  Anyone have a good recipe?  Or know what to do with it/put it on?  Thanks!

How about something like a Thai dish. Pineapple, shrimp and curry sauce over a fragrant rice like Jasmine?

You can throw in red/green peppers, some onion.

I've never tried it, but I bought a pineapple at the grocery store.  Sounds like it would be good!

thanks guys!  I found a couple recipes that also used mango (which may be what I was thinking of originally), but they aren't good here, although I could try getting some in a jar/can or something.

We love to make "Hawaiian" burgers. Grill your burgers and pineapple rings. Add the pineapple on top of the pattie, lettuce, tomatoes, blue cheese etc. Its delish!
