As I'm sitting here devouring my lunch (which is last night's leftover dinner), I realized that I should probably share this recipe! Soo easy and delish, and pretty summery for those who want to urge spring to visit you!:
Pork Tenderloin w/ Peach Lime Salsa:
Serves 4
For the pork:
1.5 lb lean porok tenderloin
2 cloves garlic, minced
2 teaspoons evoo
salt & pepper
Combine garlic, evoo, s&p until it's a rough paste. Coat the pork tenderloin in the paste and let sit at room temperature for 10 mins or so. Grill over med-high heat until about 150-155 degrees (about 12-15 mins per side)
For the salsa:
2 large peaches, peeled, pitted and cut into 1/2 inch pieces
1/4 cup mint
3 tblsp fresh lime juice (note: i used bottled b/c i didn't have any limes and it was still great!)
1 small red onion
Salt
Combine ingredients and serve over pork.
