Girls' Night Drink & Apps Suggestions?

Hi everyone,

Having a few g/fs over this Friday & wanted to make some apps & a fun mixed drink (preferably low in calories). My only problem is that I don't have a lot of time for cooking, etc. Here's some apps that I was thinking of doing...any suggestions are welcome! Thanks!

Veggies w/ hummus & dip, chips & salsa, few pizzas cut up very tiny, cheese & crackers, fruit, brownies, cookies

  • The Skinny Girl Margharita sounds great!!!  Martinis are always good.  Or even just a flavored Kettle One and tonic with oranges, lemons or limes... very low cal. 

    Add some guacamole or taco dip with the chips and salsa.  A margherita pizza is healthy and very good, much better than sausage or pepperoni.  Maybe a salad with the pizza?  Or lettuce wraps with a sauce.  You can prep everything the day before so all you have to do is pull out the tray.  I used this recipe (minus the tamarind pulp cause I have no idea what that is) for the sauce and it was so good:

    1/4 cup chopped cashews
    2/3 cup chopped fresh cilantro
    2 cloves garlic, quartered
    2 green onions, chopped
    1 Tbsp. sugar
    1 tsp. black pepper
    1 tsp. cumin
    ----
    1/2 cup honey
    4 tsp. white vinegar
    1 tsp. balsamic vinegar
    1/2 tsp. tamarind pulp*
    Pinch ground saffron
    1/4 cup olive oil

    Combine first 7 ingredients in food processor. Blend with short bursts until the mixture is well blended, and the cashews and garlic have been chopped into pieces about half the size of a grain of rice.
    Combine the honey, vinegars, tamarind, and saffron in a small bowl. Heat the mixture for about 1 minute in microwave then stir until tamarind pulp dissolves completely.
    Pour mixture into blender or food processor and mix with cashew mixture (about 20 seconds).
    Pour sauce into bowl, add the oil and stir by hand. Cover and refrigerate at least 30 minutes.

  • Tamarind is a reddish-purply fruit from SE Asia that has a unique sweet-tart flavor.  You can find tamarind paste (cooked down tamarind pulp) in the international section of some supermarkets. 
  • Combining your ideas for fruit, cookies, and pizza, have you ever made a fruit pizza? 

    Take 1 package of sugar cookie dough (like the Pillsbury refrigerated kind) and press it flat into a cookie sheet or round pizza pan.  Bake it according to directions, but be careful not to overbake.  Once it comes out of the oven and cools a bit, spread on a package of light cream cheese.   Cover the whole thing in colorful toppings of sliced fruit.  Strawberries, blueberries, and kiwis are perfect. 

     My girlfriends love this and it's so easy.

     For a drink, I came up with this easy one.  Follow the tip at the bottom of the post to make it lower calorie. 

  • My go-to girls' night drink is the raspberry lemon drop martini.  It probably isn't that low in calories but you can sip on one of these all night and they are positively amazing!

  • We always like caprese skewers (mozarella, cherry tomatoes, and basil on toothpics).

    I would also add some guac with the chips and salsa. Maybe a pineapple salsa (Whole Foods makes an AMAZING one). 

    Another low fat option is shrimp and cocktail sauce or even olives (which aren't low fat, but filling and better fats than some other things!).

    Everything was a HUGE hit! The mozzarella sticks were to die for! GL & have fun! :)  

  • I was going to suggest the caprese skewers too- drizzled with balsamic vinegarette. Yum.  Also, you could do blanched asparagus wrapped in prosciutto or bacon and baked. These are always a huge hit.  Shrimp cocktail, cool veggie pizza (recipe on Kraftfoods.com) is a hit at the parties I've been to or hosted.
