Potluck Help

I signed up to bring a salad/vegetable for a potluck at work tomorrow and I need help deciding what to bring. I don't really want to just do a veggie tray so ideas are welcome!

I have class tonight, but would like to make or put together whatever I bring tonight. So, it must be easy and it must be something that will keep for 15 hours or so. Healthy is also a plus.

  • How about a spinach salad? Just add the dressing just before serving.

  • I have an orzo salad in my blog that I love (linked below)... and is pretty easy to prep the night before (I think it calls for cheese- you could leave that out or put it on the side so that it can sit out).
  • My mom makes this really good asian cole slaw. It is just a bag of slaw, broken up roman noodles, almonds, and then a dressing (which I forget but can ask her for you). Of course almonds are a concern with nut allergies.

    Could you do a spinach dip, or is that more of an app and not veggie dish?

    My mom makes this dish too, and I think it's just normal slaw dressing....I don't normally like cole slaw, but I like this dish
