Hi! This is my first post and I am in desperate need of the Board's help.
Next week, I'm having my girlfriends from law school over to relax and celebrate our spring break. Since we can't steal away on holiday, I thought it'd be cute to surprise them with a tropical-themed party. I'm not picky about the tropical locale (Hawaiian, Mexican, Brazilian, Jamaican, etc.) but there are two considerations I have as I plan the menu.
1) I need to be able to make a majority of the dishes a day or so ahead of time as I'll be extremely busy the day of the get-together
and 2) one of my friends is Jewish which means I cannot use pork in any of the dishes.
*Note: The dishes will really be more like appetizers vs. entrees.

Just to add to the theme if you're interested, my dad had a party once in the winter where he told everyone to wear shorts and Tshirts and then cranked up the heat and made a ton of frozen drinks. It was a blast, and the perfect cure for the midwestern winter blues.
