I'm a PW today. At least I feel like it. I'm all up in this boards face! haha It's nice to have a husband who is finally able to lower his hours at work (for six weeks - woot!) in order to help me take it easy. Weee!
So yeah my aunt brought me a huge-ass bag of blood oranges from their tree this morning. Anyone have some good recipes? Cause I have A LOT. No way we're gonna eat all of these.
So far all I have that I think I want to try is a blood orange granita and chocolate/olive oil/blood orange cupcakes.

Pollo Asada
1/4 cup vegetable oil
1/2 cup red wine vinegar (can substitute with white vinegar)
1/3 cup lime juice (can substitute with lemon juice)
1 cup orange juice
1 cup water
2 tablespoons peeled fresh garlic - crushed
1 tablespoons white pepper
1 1/2 tablespoons salt
1 tablespoon ground cumin
1 tablespoon chili powder
Chilies (choose your level of hot and how much you want to use.)
1/4 teaspoon ground cloves
1/2 orange, sliced
1/4 bunch cilantro, chopped (no stems)
2 pounds chicken breasts (slice partically into chicken before putting it in the marinade)
Combine all ingredients in a large bowl and whisk to combine. Place chicken in gallon sized freezer bag or in the bottom of a shallow baking dish. Pour pollo asada marinade on top of chicken, cover the entire dish with fresh orange slices and marinate for at least 1 hour, overnight is better. (The longer the better).
Grill chicken until cooked through. Rest chicken for about 15 minutes. Slice chicken into 1/2 inch thick strips. Serve as a taco or burrito or with rice, beans, and tortillas.
**This recipe calls for oranges and orange juice, but you can use your blood oranges.
