broccoli cheddar bites

Ladies these are supposed to be for the kids but they are so good! I was so pleasantly surprised. Anyway, I thought I'd pass along an easy, healthy lunch idea.

Broccoli & Cheddar Cheese Nuggets

Ingredients:
2 Cups of any veggies chopped
1/2 cup Seasoned whole wheat bread crumbs 

1/2 cup parmesan cheese

1 ? cups Shredded cheddar cheese
3 Large eggs

Directions:
1. Heat oven to 375 and lightly coat a baking sheet with olive oil and set aside.(I just used parchment paper instead.

2. Combine all remaining ingredients and mix well.

3. Shape mixture into nuggets or fun shapes such as squares or squigglies etc..and place on baking tray. Bake for 20 to 25 minutes, turn nuggets over after 15 minutes. Serve warm

I put them in a baggie and piped them into "fries."  That took about 5 minutes off of the baking time as opposed to shapes that are wider.

  • Ha! I looked at your blog last night and added these and Mommy Mac to my "kid menu" for the week! I think I'm going to try both nuggets and fries and see what gets the better response from my 2 little critics. :)

  • I made these a couple months ago and we all loved them! I used spinach as the veggie. I like the idea of piping them into fries--I'm going to try that next time.

  • I made these once a long time ago, but forgot about them. thanks for the reminder!  The fry idea is great too.

    ETA: Do you really just put in chopped raw veggies? For some reason i think i remember steaming them before?  If they are raw, I assume they'll have to be chopped very very finely in order to make into a ball or to squeeze out of a bag?

  • I steamed them and chopped them very finely. I already had the food processor out as i'm cooking up a storm today.  lol

  • good to know, thanks!  have you tried any other veggies?  broccoli still seems to bother ingrid, she has a sensitive tummy.  i have tons of baby carrots to use up.  maybe i'll give it a shot and report back... happy cooking to you!
