My Featured Recipes (very late)

Hi ladies!

It would appear that for some reason unknown to myself (and the nest) that I was blocked from posting on this board. DUMB! It looks like its fixed so I figured I should share my featured recipes! 

I love mexican food and we eat something of that nature at least once or twice a week in our house. Last week I tried this Flauta Recipe  and I LOVED it. I loved that it was some what healthy, meaning not dropped into a deep fryer  and Logan even liked them.

 Tamale Casserole (I took this from a Cooking Light magazine that I have had forever)

1 cup preshredded 4-cheese Mexican blend cheese, divided

1/3 cup fat-free milk

1/4 cup egg substitute

1 tsp ground cumin

1/8 tsp ground red pepper

1 (14 3/4) can cream-style corn

1(8.5 oz) box corn muffin mix

1(4oz) can chopped green chiles, drained

1 (10 oz) can red enchilada sauce

2 cups shredded chicken breast

1/2 fat free sour cream.

  1. Preheat oven to 400 degrees
  2. Combine 1/4 of cheese and next 7 ingredients (through chiles)in a large bowl, stirring just until moist. Pour mixture into 13x9 inch baking dish coated in cooking spray
  3. Bake at 400 for 15 minutes or until set. Pierce entire surface liberally with a fork; pour enchilada sauce over the top. Top with chicken; sprinkle with remaining cheese. 
  4. Bake at 400 for 15 minutes or until cheese melts. Remove from oven and let stand 5 minutes. Serve topped with sour cream

I usually serve with a side of yellow rice and a veggie.

 Someone showed me this Trifle recipe last week and it was super tasty when I made it. I ended up using fresh raspberries and strawberries and it was just as good.
