It's Lent and I am uninspired with cooking...

It seems that the days I can't have meat are the days I crave it! I need some meatless inspiration and heck, some other meal inspiration too...I feel like we are in a rut! Also, anyone give up anything for Lent or vow to do something? I am going to be a better Catholic and be better about going to church and I am going to try to give up ice cream, I make no promises there though :-)

  • I'm not Catholic but we still eat meatless from time to time, here are some ideas:

    -meatless spaghetti, ziti or lasagna with salad & garlic bread
    -scrambled eggs & hashbrowns
    -pancakes/waffles/french toast
    -veggie stir fry
    -grilled cheese & tomato soup
    -mac & cheese
    -veggie pizza

  • I'm giving up my uterus for lent.   :: trying to keep a straight face ::

    No, actually I'm giving up pepsi. It's a 5 step program. 

    Can you have fish?   Shrimp scampi, Honey lime salmon, I have a yummy recipe for cheesy beans and rice. It's soooo good.   Mommy mac.

  • I'm interested too. H is Catholic, and we cannot do meat on Friday's either.

    Ally, I plan on doing your Southwestern Tuna Caserole LOVE that! I added black beans and LOVE it! :)

    Beef/chicken(even eggs)/prok=meat I'm not sure on the milk part...

    We LOVE Papa Murphy's veggie pizza this time of year :)

  • Vic - you can have eggs! That is one thing I know for sure! Dairy too! It is just meat, but since Jesus turned a little bit of fish into a lot of fish, we can have fish too! I suck because having breakfast for supper freaks me out! I wish I knew how to make crab legs and other seafood...that's why we always end up with grilled cheese or mac-n-cheese because I can't cook seafood well even though I love it!

    What?  Brinner is my FAVorite!  Yum!  Waffles, omelettes, fruit cups, OJ... any of the above Yes  Maybe you could put your pajamas on early that evening and just pretend it's morning/breakfast..?  Stick out tongue

    OH! the eggs are on! H told me NO eggs! He's going to get kicked :) LOL

    you just boil it all for crab leggs, until they're 'bright'. Also, Aldi's has these stuffed fish, I LOVE THEM! they're like $2.99ea SO yummy! They're a joke @my house, because I was going to make them the day I went into labor, but my water broke! There is salmon with crab meat in it. and one other one, I think talpia with shrimp in it. And we LOVE the Gorton's garlic & herb fish 'sticks' I am NOT a fish stick eater but these are GOOD, and they're big.

     

  • Posts like this make me feel sorry for my husband.  We only eat meat like twice a week?  poor guy.  We eat pizza, veggie lasagna, spaghetti w/ alfredo, brinner, etc.

  • I was always told no eggs too- I'll have to investigate : ) 

    I have only been Catholic for about 3 years now, but it's not been too hard of an adjustment to skip meat on Friday.  The only rough part- I am not a huge seafood fan!  We usually do meatless pasta (a great excuse to have fettucini alfredo), veggie pizza,  grilled cheese, broccoli cheddar soup, and grilled portobello mushrooms when it warms up!

     Have a happy Lent- and good luck with the ice cream.  I am giving up pop and miss it already!! 

  • I would say eggs are good! I went to a catholic school all 12 years and we were served and ate eggs a lot during lent :-)
  • Crab legs are EASY! But DON'T boil them! I showed Beth how to make them one time! Mmm and so good!
