I dont have any new recipes, but i'll be making a few things tonight.
1) Chicken fried rice w/ lots of veggies and stuff.
2) if i have time, Rice krispie treats (well, brown rice crisps since the real kind are not Gluten Free). I've been craving them for like a month and finally picked up some marshmallows

I made salsa chicken in the crockpot overnight. It was just chicken breasts and a jar of my favorite salsa on low cooking while we slept. When I get home, I plan on shredding the chicken and serving it with cheese, more salsa, and soft taco shells.
I am going to also make Annie's garlic rice pilaf. It is one of our favorite sides. But instead of lemon juice, I am going to use lime juice.

We love making salsa chicken
we just saute some chicken in olive oil, then in the last 5 min drench it in salsa and cover it with mexican shredded cheese

You could always make them without marshmallows, too! 1 c. sugar, 1 c. light corn syrup, 1 c peanut butter (melt/dissolve all, but don't boil) + 6 cups rice crispies.
Now I think I want some!!
I am going to make my mom's soda bread to bring to work on Thursday, and I'll probably make it tonight.
Both of those sound yummy!
I planned on making meatloaf tonight since it's easy - but DH might be meeting up with his dad for dinner so who knows what I'll have for dinner.
Last night we went simple and I made panko crusted chicken tenders, steak fries and some carrots. I need to start using panko more because it was so crunchy and tasty!
MMM i might have to try that sometime! I had no idea you could make them w/o store-bought marshmallows lol.
OH MAN irish soda bread. My mom made the best GF one on sunday when we had our st pattys day dinner at my Aunts house. I ate like 5 pieces

I just discovered panko breadcrumbs and love them too!
Another thing I did was cut zucchini into sticks, dip them in egg and panko and bake them. Yum!
I have another recipe for salsa chicken in the crockpot from my local board's online cookbook blog. It's delicious... maybe I will make it tomorrow afternoon to cook while we're out with the realtor looking at houses.
Target's Archer Farms brand has a delicious cilantro and lime rice that we make with it. it's delicious.
Last night while I took Mason to puppy kindergarten DH made homemade marinara sauce
We have plenty left over for both our lunches! I'm working tonight so I'm not cooking...
I don't think that I've ever had soda bread before - sounds like I'm missing out!!
I made some lemon curd last week and have a ton left so I think I'm going to make some lemon squares to bring in to work. I'm thinking about mixing in some blueberries - I'll probably just get frozen ones and cook them with a little sugar and add them to the lemon curd.
Assuming I find the time this week to make them that is!
I am going to try tofu garlic alfredo for tonights supper.

A couple of weeks ago I was trying to make chicken enchiladas, thought about them all day and was so excited to get home that night! And I didn't smell anything when I walked in the door. I went over to the counter... and I plugged in the food processor instead of the crock pot. Oops!!
I made this beef and broccoli thing. it's spaghetti with shredded boneless steak, onions cream on broccoli soup soy sauce and broccoli florets in it.
Irish soda bread is awesome. My mom makes it all the time. My mom took care of a friend of her's this lady was from Ireland and had my mom's soda bread and yelled at her. apparently the part of Ireland she is from they deep fry it.
WHAT!? deep fried soda bread? that just sounds so wrong and icky.

My mom's is a dark/spice bread really. I'll post the recipe tonight when I get home. It really is awesome. some of the basic ingredients that are not necessarily staples are raisins (16 oz), nutmeg and allspice (although my mom usually doesn't use this). The funny thing, I was in Ireland a couple years ago and went to a cousin's house for dinner. And by cousin I mean her dad and my grandmother were first cousins, but we've kept in contact with them despite the distance, etc! Well, first we had soda bread, and it was basically my mom's. Then we had pot roast- and that and the sides were my mom's, exactly. Even though my family has been in the US for 120+ years... we make basic meals the same exact way as our cousins in Ireland!
I had Stuffed Pepper Soup for lunch...
2 lbs ground beef- 1 cup chopped green pepper- 1/4 cup diced celery- 1/4 cup diced onion- 1 (29 ounce) can tomato sauce- 2 (16 ounce) cans diced tomatoes- 2 cubes beef bullion (dissolve in water first)- 1/4 cup brown sugar packed- 2 teaspoons salt- 1 teaspoon pepper- 1 teaspoon soy sauce- 2 cups cooked white rice
Brown the meat and drain off fat. Add peppers, onions, and celery and saute for 5 minutes. Stir in tomatoes and sauce, beef bullion, and all remaining ingredients except for the rice. Reduce heat, cover and simmer for 45 minutes. Stir in the rice and heat thoroughly.
I made it yesterday and put it in the fridge, then I heated it up and made the rice today and it was sooooo good. Once you put the rice in it thickens up A LOT, so don't worry, if you want it soupier when you re-heat it just add another 2-3 cups of the beef bullion.

The stuffed pepper soup sounds SO yummy...I'm going to have to try that!
Tonight we are having steak. It was on sale at the store, so we thought we'd treat ourselves. Later this week we're making quesadillas with rotisserie chicken from the grocery store (my favorite dinner shortcut) shredded cheese and salsa. Maybe some black beans too. Yum!
