Does anyone have any good crock pot recipes? I'm heading into a busy time of the year and CP recipes are my go-to. I'm looking for new stuff to try with it. I normally end up doing some sort of stew, pot roast, or chili. Anyone have any favorites worth trying?

I like to make a chicken taco filling:
3-4 chicken breasts (from frozen is okay)
1 can corn
1 can black beans
1 chopped onion
1 can diced tomatoes w/ green chilies
1 package taco seasoning
Cook 6-8 hours on low... serve over rice, or in tortillas, with cheese & sour cream
I also like shredded chicken sandwiches.
4-6 chicken breasts (from frozen is best, due to the ice melting to make some water to keep meat moist). Add 1 bottle BBQ sauce. Cook 3-4 hours on high. Shred with a fork when done. Serve on hamburger buns. I usually have cole slaw as a side. [This could probally be adapted for a beef or pork lion for shredded BBQ beef or pork.]
I also do lasgana in the crock pot, but on weekends only (to watch and make sure noodles don't burn... learned that lesson before). Put cooked ground beef on the bottom so the noddles don't burn, and layer lasagna as usual. Noodles do NOT have to be cooked beforehand. Be generous with the sauce (1 1/2 to 2 jars). I usually layer with spinach, zucchini, squash, onion, and mushrooms so I get extra veggies in my diet. For the cheese filling, I use one big container cottage cheese, 1 bag low fat mozzerella, 1 egg, and 1 big spoonfull of chopped garlic.
I recently saw a recipie for oatmeal in the crock pot. It had apples, milk, water, brown sugar, regular oatmeal (not quick cook), and the writer suggested dried cranberries and lessing the liquids. Looked very tasty!
Those are my favorites... aside from chili and stews.
I've never tried any of her recipes, but a lot of it looks good. I always forget about this blog when I'm making my shopping list.

Zesty Slow Cooker Barbecue Chicken
Ingredients:
6 Frozen Chicken Breasts
Sauce:
12 Oz. of your favorite BBQ sauce (I've found that vinegar based sauces taste better in the end, Open Pit is inexpensive and really yummy with this)
1/2 cup Italian Dressing
1/4 cup Brown Sugar
2 Tablespoons Worcestershire Sauce
Combine ingredients for sauce, mix well. Pour over frozen chicken in crock pot and cook on low for 6-8 hours. Shred the chicken and serve!
This makes a good sandwich, but it is also really yummy served over baked potatoes or on corn tortillas with lettuce & spicy ranch dressing.
I like to cook chicken breast in the crockpot. The resulting shredded chicken can be used in countless dishes -- enchiladas (which can be frozen), bbq chicken sandwiches, burritos...
I also LOVE crock pot liners. I had cleaning the crock pot after I use it, so these help with quick/easy clean up.
