Some birthday party menu help?

My son is turning 2 next week and next Sunday we're just having a small family party - Dr. Seuss is the theme. What kind of fun, but easy stuff should I serve? I didn't want to just go with your typical pizza/sandwich type food. Any ideas? TIA!

  • How about Sloppy Joes, Italian Beef/Sausage or Pulled Chicken Sandwiches?  All three are pretty easy to make and can be left in a crockpot.

  • Green eggs and ham (Ham and Spinach mini quiches)

    1 fish 2 fish, red fish blue fish (Swedish fish and the multicolored gold fish (separate bowls).  

    We added vege trays, fruit trays and cut up loaves of french bread.  

    Our guests were mostly in the 1 to 4 year old age range.   

    We also did character cupcakes.  One of the craft stores (Michaels?  AC Moore?) had character molds to make chocolate lollipops.  We made medallions (no sticks) instead and used these to decorate cupcakes).   

  • You could do bread bowls with clam chowder (in honor of 1 fish 2 fish)
    I love the cat in the hat parfaits in this party.

  • I am in the same boat, but am leaning more toward light snacks since we are having our party in between lunch and dinner. I am thinking of doing fruit kebabs, a nice cheese and cracker plate, and something else that I have not figured out. But, I want to make it all edible for babies/kids.

  • Another spin on Green Eggs and Ham would be to do deviled eggs, but color the yolk mixture green before piping into your eggs.

    Another poster mentioned swedish fish... I saw adorable jello cups that were done with those in it.  I'll have to find a photo :)
