Another dessert post

I really can't decide what to make for my Dad's birthday.  Since we're having lasagna, I feel like a cake would be too heavy, and besides, it's just 4 of us, so most of the cake will not get eaten (i don't like cake that's more than a day old -- the frosting gets squishy, and I don't need it in my house)

How do we feel about mini lemon meringue tarts?  I bought mini tart pans a while back, and I haven't had the chance to use them.  I could assemble them at my house, then just torch the tops when we are ready to eat.  I also haven't used my kitchen torch.

And since it's a new recipe, I can blog it!

Nevermind.  Dad wants to make Bailey's ice cream, so I need to make something chocolate to go with it. So much for light.
