I have never had quiche before, but DH has and has been begging me to make it.
I made it today for lunch, and wow I loved it! I think I know what Im making for our Easter dinner this year 
Here's the recipe I used (I eyeballed it, bc I hate using measuring cups). I didnt have a shallot, so I used some dried minced onion instead. I also added diced canadian bacon to it as well.

Yumm, cheddar beer quiche sounds good!
I like spinach or asparagus, with swiss or white cheddar, and always mushrooms and bacon. Sometimes I put a layer of hash browns in the bottom.
They freeze wonderfully, BTW... I usually make 2 and freeze one. Just make sure you keep foil over the top when reheating to prevent burning and drying out!
