Here's a couple recipes involving eggs...Enjoy!
Sausage and egg casserole-you can use any meat, or just veggies-I've had it with asparagus, broccoli, mushrooms etc. and my brother in law puts dried cranberries in his at Christmas. My Mom's friend uses tater tots to line the pan instead of tearing up chunks of bread.

Chile Relleno Casserole:
(3) 4oz cans or (2) large cans of whole green chiles
2 cups of shredded jack cheese
1 cup of sharp cheddar cheese
1 cup of half & half
2 eggs
1/3 cup of flour
(1) 8oz can of tomato sauce (optional)
Pre-Heat oven to 350?
Grease 8inch pan (Pyrex/glass is best)
Rinse chiles and remove seeds-slice and lay flat on paper towel
Mix cheese together
Set aside ? cup of cheese for topping
Mix half & half, eggs, and flour
Layer in pan
Chiles, then cheese, then egg mixture?2nd layer
Top with tomato sauce if desired
Bake 1 hour
Top w/remainder of cheese while still hot
Egg in a hole-Easy to make in the a.m. before work, and great for dinner with some other protein!

It's hard for me to be all that creative with the eggs these days, but my Bradley coach reminded us yesterday - "2 a day, every day, until you give birth." Dude...that's a LOT of egg. :P ...so, I better start getting creative.
