Anyone Have a Good Vegetable Dish

that will please someone who is very picky (my DH)? It cannot have onion (incl onion salt), mushroom, tomato or bell peppers. He only likes carrots, broccoli, and green beans. I need to make something to bring for dinner with MIL.

    I also love cutting cauliflower up into florets, tossing in olive oil, salt and pepper, and topping with lots of minced garlic, then roasting until soft and caramelized. Yummy.

    Haven't tried it with asparagus but it's almost asparagus season again. I'll have to try it. Thanks for the idea!

  • Think I could omit the red pepper in the roasted broccoli? Or anything I could replace the turnips with? He doesn't like those either. Also no cauliflower... yes, it's fun trying to cook for him! Stick out tongue
  • I think maybe I'll try Alton's Brown's roasted broccoli with Parmesan cheese instead. I'll let you all know how it turns out.
  • Sounds like you're all set, but if you need another recipe in the future, this is really good. It's now part of our Thanksgiving spread (minus the chicken). I subbed slivered almonds for the pine nuts and broccolini or the broccoli rabe, but either would be yummy. You could use the same topping with pretty much any other veggie, too.

    Real Simple broccoli rabe with apricots, garlic and pine nuts

    And oven-roasted carrots are really yummy too. Just cut a small bag of carrots into 1"-2" chunks, toss with olive oil, and roast in a hot oven until the skin is wrinkly and they're slightly browned, then sprinkle with sea salt.

  • At the swapluck (foooorever ago), someone made broccoli florets, lightly tossed with champagne vinaigrette dressing and put in the oven on 'broil' for 3-6 mins (or something like that). It was delicious and easy!

    Yeah, SOUNDS fun! I thank my lucky stars every day that my husband will eat pretty much anything I put in front of him. I love it.

    You can omit the red pepper flakes from the roasted broccoli, though they won't be spicy anymore. You can just do the glazed carrots without the turnips, or you could try parsnips instead. They're sweeter than turnips and he might like them. Bummer about the cauliflower. Would he try Brussels sprouts? They're awesome if cooked properly.

  • I think the less spicy would be okay. He doesn't like things too spicy. I doubt he'd eat parsnips. I have to be honest in that even I have never had turnips or parsnips. He is picky but I have known pickier. My younger brother won't eat any vegetables at all. The hardest thing is that DH is very picky about how they're cooked. He doesn't like them cooked long at all. Basically they have to be like stir-fry. And in a lot of recipes that doesn't work.

    We do grilled asparagus (literally ... brush with olive oil and put on the grill), grilled green beans (assemble a tinfoil packet, toss with oil, salt, pepper, garlic, and roast on the grill), grilled Brussels sprouts (see Grilled Green Beans, above). Can you tell we BBQ a LOT? 

    How about artichokes? Kale chips? Cabbage? Wedge salad?

    Yeah, but he won't. He'll just make himself something else. Usually something that isn't terribly healthy so I'd rather work with the healthy stuff he likes. No, none of the ones you've mentioned will he eat. Some I wouldn't either, honestly. But thanks for the ideas! Big Smile

    ETA: Exc green beans, he'll do that. We don't have a grill/BBQ though. I guess I could use the broiler?

    Stick out tongue Okay, good. My mom never roasted vegetables except when making a roast so I'm kind of clueless about roasting vegetables. But I've tackled the whole slow cooker thing now and she never used that either.

    Hannikan, I don't have a recipe for you but you have my utmost respect! :) I couldn't even fathom cooking if my husband was picky. I hope he loves whatever you wind up deciding on!

    Well that's just it, I don't cook for him. He makes his stuff and I make mine because I'm not going to waste time, energy, food and money on stuff he won't eat. We don't eat together because he's usually out performing at dinner time anyway. So I want to find some things he'll eat (that are healthy) and that don't take a lot of time because I'm always too tired after teaching all day. So I am trying to find stuff I can make in the slow cooker and leave to cook all day (while he's home to check on it). And then he can reheat it for lunch during the day or dinner when he gets home.
