Non-meat Recipes

I feel like we go through meat like crazy so I'm looking for some good, different, non-meat recipes. (We do the usual spaghetti/pasta dishes). 

Please share yours!

  • I'm not sure if these are different, but here's what I have:

    Scrambled eggs
    Pancakes/Waffles/French Toast
    Veggie stir fry
    Grilled cheese & tomato soup
    Mac & cheese
     

    Meatless meals can be hard, sometimes I find it's easier to use less meat in a meal. For example, last night we cooked 1 lb. of chicken breasts & used 1/2 of it in sweet & sour chicken, we'll use the other 1/2 in BBQ chicken quesadillas.

    Love these.  Lentil Tacos.

    Ingredients

    • 1 cup finely chopped onion
    • 1 garlic clove, minced
    • 1 teaspoon olive oil
    • 1 cup dried lentils, rinsed
    • 1 tablespoon chili powder
    • 2 teaspoons ground cumin
    • 1 teaspoon dried oregano
    • 2 1/2 cups vegetable broth (or chicken broth -> better with chicken broth)
    • 1 cup salsa

    Directions

    1. Saute the onion and garlic in olive oil until tender. 
    2. Add the rinsed lentils, chili powder, cumin and oregano.  Cook and stir for 1 minute. 
    3. Add broth and bring to a boil.  Cover and reduce heat to simmer for 40-50 minutes or until the lentils are tender. 
    4. Uncover and cook for 10-15 minutes or until mixture is thickened. Mash lentils slightly.
    5. Stir in salsa and serve.

  • I'm always pimpin' my cheesy beans and rice recipe but it's so yummy. It also is cheap and freezes well.

  • I have a recipe for Creamy Baked Ziti in my blog, I add meat but the original recipe didn't call for it. It's really good!
