  • I soak 1 1/2 c pinto beans + 1 1/2 c red kidney beans overnight, turn them on with 6 cups water in the morning. At lunch I drain a little of the water out and add in 2 can's organic mexican style diced tomatoes, 1 small can organic tomato paste (can use home made if you have it on hand), one medium sized red onion diced, 1 green bell pepper diced, 1 red bell pepper diced, salt/pepper to taste, 1 tblsp chili powder, 1 tblsp cumin, some celery salt and let it simmer away for another 3-4 hours.  We serve it over brown rices... super yummy and filling!
