need a quick crockpot meal idea

Ack! We've got company coming this afternoon now and Katen has dance at 5pm. If I don't make a crockpot meal we won't eat until 7pm.

Ideas? We have a lot of groceries around so anything goes. Maybe something with chicken? Not fiesta chicken though. We just had that one.

  • We did Chicken Cacciatore (sp?).. Basically throw chicken breasts in the crockpot with spaghetti sauce, green peppers, and mushrooms..I cooked it on low for about 5 hrs.. it was delish served over noodles!  I have also done buffalo chicken in the crockpot but that's not always well liked by kids..

  • chicken of desired quantity

    bag of mixed frozen veggies, or fresh that you have on hand, in a quantity your family likes to go with the amount of chicken you added

    1 can cream of something soup your family likes

    about 1 tsp Italian type seasoning

    depending on amounts, a bit of chicken broth to cover.  We didn't.

     

    Cook until chicken is done.  Shred/chop, add back in to goop.

    Serve over rice, noodles or mashed potatoes.  DH did this on the stove last night with corn, asparagus, carrots, peas and celery, because that's what we had in the fridge/freezer, but could easily be done in the crock pot.  He put it over mashed potatoes, and it was really good!  He served it with crescent rolls, but garlic bread would also be good.

  • I did penne noodles because thats what we had but you could use whatever kind of noodles.. It basically tastes like chicken parm except the chicken isn't breaded..we just melted some mozzerella on top because who doesn't love cheese?  :-)
