Who was asking about chicken salad?
I know there was a post sometime last week where someone was looking for a chicken salad recipe. I'm too lazy to go back and find it, so I thought I'd just post this here.
We had friends over on Sat night and grilled chicken and had three breasts left over, so I made chicken salad sandwiches last night for dinner and they were amazing! This is the recipe I used, and put it on croissants. We are definitely having the rest of it tonight!

Again, I used grilled, not roasted, chicken, and I also put the chicken in the food processor instead of just dicing it.
Would highly recommend it! And now that I think of it, it would be even more amazing served with caprese salad!
