  • hmm I suppose I don't either :/  I haven't been baking as much as I used to. I tried this breakfast casserole recipe on sun...didn't turn out too amazing. Don't think its one for the books thats for sure haha
  • I made this delicious and easy Salmon Teriyaki the other night. So tasty! DH isn't a huge salmon fan and he loved it too. I'm actually eating lefovers for lunch today!

    Salmon Teriyaki

    Teriyaki Sauce:
    1/3 c soy sauce
    1/4 c granulated sugar
    1 Tbsp brown sugar
    2-3 cloves garlic, minced
    1 tsp ginger, freshly grated
    1/2 tsp orange zest, freshly grated
    1/3 c water
    2 Tbsp corn starch (next time I'm going to use a little less - it turned out pretty thick)

    In medium causepan, heat first 5 ingredients over medium-high heat. Dissolve corn start in water in separate bowl and then add to the rest of the mixture. Cook on medium-high heat for 8-10 minutes, stirring occationally, until sauce reaches desired thickness.

    Salmon:
    1 Tbsp olive oil
    4 4-6 ounce salmon fillets, skin removed (I just used a package of frozen fillets - ended up being 3 fillets in there)
    kosher salt to coat salmon
    ground black pepper to coat salmon
    4-5 green onions, sliced on the bias (I did not include these)

    Preheat oven to 350.

    Wash and pay salmon fillets dry with paper towl. Generously sprinkle both sides with kosher salt and ground black pepper.

    Heat oil in non-stick, oven-proof skillet (I don't have an oven proof skillet so I just ended up transferring to a baking dish). Once oil is hot, lay filletts (non-skinned side down) in the skillet. Pan sear the salmon on the one side until golden, about 2-3 minutes. Once golden, gently filt fillets over and brush genersouly with teriyaki sauce. Transfer to the oven and roast for 6-10 minutes, or until the fish is tender and flaky. Careful not to overcook.

    Remove the salmon from the oven. Drizzle left-over teriyake sauce over salmon and garnish with sliced green onions. We had this with a side of rice pilaf and corn.

  • I think tonight I am going to grill some chicken and make chicken Caesar wraps.  sounds yummy.  Or maybe make some breaded chicken parm.  We'll see what I am in the mood for.

  • I'm not cooking much this week- DH is out of town and my mom is visiting.  We went to dinner on Sunday to a nice little Italian place in our suburb... and it was phenomenal!  I first went there when I interviewed for my current job, and this is the first time I have gone back.  

    My mom had eggplant & veal parmesan with fresh mozzerella.   Thin layers of all, stacked so there were two layers of each.  The presentation was simple & pretty!

    I had asagio stuffed gnocchi in a vodka sauce (almost like little raviolis).   It was amazing!!  It was a special and not a regular menu item; our waitress said they had it all weekend and it sold out both Friday & Saturday nights, so maybe it will become a regular one!!   I have searched recipes, and will definitely have to try to replicate it!

  • I think I might try making the Kale chips I thought I made the other night.  Turns out I made Leak chips which weren't too bad either.

  • Kale chips are yummy!  But they don't store well...they're only good for a day or so afterward.

  • I am sharing something a little unconventional that I found on a website. For those of you familiar with 'the bachelor" Tenley has a health and fitness website and last night I made her "Quinoa Mac and Cheese." It was actually quite good for those interested in healthy alternatives. It was fast and easy.

    -1 cup Quinoa cooked

    -Pour cooked quinoa into serving bowl

    --Add a pinch of garlic salt (or get creative w/ other flavors)

    -Add 1/2-1 cup of shredded cheese (any kind, your preference)

    -Stir until completely melted and voila!

    Next time I may make it with the milk, flour, cheese on stove top mixture and see how it comes out

     

  • since DH is away for 8 weeks and I'm not much into cooking, working with raw meat (or seeing it, for that matter) or eating leftovers lately, I'm having to get creative. I found these single serving pre-cooked chicken breasts that are breaded and stuffed with either kiev or cordon bleu, so I'll probably eat one of those tonight with some mac n cheese or something. Just easy foods for now.

    I'm also finding that homemade pizza is an easy fix for me! For some reason, the idea of gooey, melted mozzerella cheese is always super appealing. Another good one I've been into and that's easy is waffles :) love breakfast any time of the day!

    I made this scone recipe on Sunday with some dark chocolate chips. They were excellent!
