So I tried to make the cake last night. I used a white cake box mix and followed the instructions exactly, only subbing OJ for the water and adding 1 tsp of orange zest. It was pretty dry and not very orangey at all. It just tasted like dry, bland cake. ![]()
So tonight I'm going to try the 2nd recipe you posted, which looks similar to what I did except it adds in pudding mix and more orange zest, as well as some juice from the actual orange. Will the pudding mix take care of the dryness problem? And will that extra zest make it taste orangey?
I'm worried because I need the cake for tomorrow, so I don't have time to make another practice one.

I think the acidity in orange juice can make it dry.
The pudding is what will make a cake really moist, and the Cake Mix Doctor is a published cookbook, so the recipes are tested, it shouldn't be a problem.
Make sure you don't over-bake it, as well. Also, yes, extra zest should make it more orangey than juice will.
