I've eaten it at restaurants and know I like it, but I've never cooked any myself. I bought some this week. How do I prep it?
My thought is: slice thinly, frying pan with olive oil and garlic salt?
Will this work? Other suggestions?
Re: Prepping Zucchini
I typically either steam it, then add salt and pepper, or saute it with olive oil, fresh garlic, salt, and pepper.
And, yes, you can slice thinly (like coins), or make thicker slices, and cut those into fourths (or any other way, I'm sure - this is just how I do it).

This is also really good - I'll do it with all sorts of vegetables...
Cut them up, shake in breadcrumbs or Shake & Bake, then bake them and you'll have breaded zucchini. It's really good. Like I said, I will usually do a mix of veggies all prepared this way - zucchini, peppers, onions, eggplant, etc.

Thanks Erin and Megan! These ideas sound great!
I'm making it tonight, I'll have to post on how it goes!
