Got fish...need ideas

I have a couple of tilapia fillets that I want to cook for dinner, but I am short on inspiration.  Got any ideas?

Requirements:

No frying (trying to be healthy) - pan sautee with a small amount of oil is okay.

Simple and quick is best.

  • One of our secretaries was telling me about sauteed fish with a tequila lime sauce that sounded awesome.
  • tacos....we did this the other night.

    taco seasoning (or mix of salt/cumin/pepper/cayenne), grill

    Me too! Lol. Simple pan fry w some old bay and other seasonings of ur choice. Hmm, now I want fish instead of the pizza we ordered. I'm sure I'll cook again one day. Right now I have a sleeping Carly on me :)
  • We just made chicken with this last night, but I think it would work well with fish too. Mix 1 package of Italian dressing seasoning, 1/4 c of honey and 1/2 c of orange juice. You're supposed to marinate it for an hour, but I missed that step and made it to late. Instead I put it in a saute pan, covered, and just cooked it on low until it was cooked through, flipping the breasts over every 5 min or so. Pretty tasty!
  • When I can't think of anything to do with fish, I ususally just wrap it in foil and poach it in white wine with dill and lemon....quick and easy.
  • I'm late but maybe you can do this next time.

    Grease foil on a sheet pan with some Pam.  Season your fish fillets with salt, pepper, garlic powder, onion powder, dried parsley and a little dash of cayenne pepper.  Dot with butter and bake in a 350 degree oven for about 35-40 mins. 

    I usually make a little whipping cream sauce and pasta but that part is not healthy..  Embarrassed
