MH and I are hosting our first holiday the Easter, but I am running into issues with the menu since he is a vegetarian. I don't want to just make some kind of fish (ok, technically he's a pescatarian) because we do that a lot for dinner at home = bo-ring. Any suggestions?
I was thinking of making crab cakes or salmon croquettes that everyone might enjoy so he has an entree of some kind, but then have an "official" entree for all us carnivores. So what goes with crab cakes? Can I serve a creamy veggie pasta as a side? Or would you go with a fruited wild rice?
Obviously, I am extremely new at this, so I am open to any and all suggestions!

Re: Vegetarian Easter?
I'm a vegetarian, and even when we host a dinner the menu doesn't revolve around me and my diet. The main entree is usually something that our guests really like, and then we add as many vegetarian sides as possible for me. Occassionaly I'll throw a second, smaller veggie entree together if I'm on the mood, but it's always after the main entree has been decided.
Sorry I can't be of more help; I don't eat fish, so I have no idea what to serve with it.

shrimp and crab fettucine or shrimp alfredo served with garlic bread and mozzarella and tomato or marinated mozzarella and olives. olive tapenade with breadsicks may aso go nicely too. sauteed mushrooms or baked potato as sides?
We are eating after church and an egg hunt, so definitely an early dinner. I can't really break the budget, so lobster is out. I am trying to find a main dish for the non-veg guests (which include MIL, SIL and husband, neice and nephew... kids are small so mom is bringing something for them and adults are not picky) that will go well with crab cakes. I posed this question to DH last evening and he was practically drooling over the creamy vegetable pasta idea, so that's in. So, with all that in mind (sorry if I didn't provide enough details in my OP), what "official" entree would go well with:
(Insert Non-veg Entree Here)
Baked Maryland Crab Cakes (with aioli and corn salsa)
Creamy Pasta Primavera with Sauteed Seasonal Vegetables
Praline Sweet Potatoes
Flowered Spring Salad
Carrot Cheesecake
