These cinnamon buns are good and simple
Butterscotch Sticky Buns
Spray Bundt Pan with pan spray
1 cup pecans coarsely chopped
1 (3.5 oz) cook and serve butterscotch pudding
Put pecans in Bundt pan and sprinkle with dry pudding mix
Then place 18 frozen rolls in pan over pecans and pudding mix
Melt 1 stick margarine, add 3/4 cup brown sugar, 1 tsp cinnamon, 1/4 cup water
mix and drizzle over rolls
Cover tightly with foil and leave on counter to rise over night
Bake at 350 degrees 1/2 hour
Loosen edges turn out on plate while still hot
Pecans will be on top

Ina Garten is really good at food that you can make ahead and only have to re-heat or serve (or even serve cold).
I would make one casserole (french-toasty) or strata (more savory), as a heavy make-ahead thing, then maybe a vegetable platter, ham (if that's your Easter thing).
There are also some great breakfast casseroles involving tater tots, breakfast sausage, etc, if you don't mind lots of fat and grease in your breakfast, they are yummy!
